Mexican Flavored Chicken

  • 1 tsp olive oil
  • ½ small onion
  • 1 jalapeño
  • 4 cloves garlic, minced
  • 2⅔ lb chicken thighs
  • 1 tsp sea salt
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1 tsp cumin
  • ¼ tsp black pepper
  1. Warm a medium soup pot over medium heat. Add olive oil. Add onion, garlic and jalapeño. Cook about 5-7 minutes. Don't let garlic brown. Meanwhile, mix seasonings together in a small bowl. Add chicken to pot and add seasonings. Stir the chicken until evenly coated with seasonings. Cover pot and reduce to medium low heat. Check in once or twice but keep covered for about 45 minutes. Shred with a fork. Serve over warmed organic corn tortillas*.
